Create homemade lavash cracker bread for a fraction of the cost of store-bought deli options.
Ingredients:
  • 1 cup lukewarm water, or more as needed
  • 0.25 cup whole wheat flour
  • 1 (.25 ounce) envelope active dry yeast
  • 3 cups all-purpose flour, or more as needed
Instructions:
  • Combine water, flour, and yeast in the bowl of a stand mixer until moistened. Add 1 cup of flour and salt, then slowly incorporate the remaining 2 cups of flour using a dough hook attachment until dough forms.
  • Massage the dough until it becomes elastic, this should take about 8 to 10 minutes. Adjust by adding more flour or water as needed to prevent the dough from becoming sticky or too firm. Cover and allow the dough to rise in a warm spot until it doubles in size, which should take around 1 hour.
  • Deflate dough and shape into a long log. Divide into 30 walnut-sized pieces and roll each into a ball. Cover with a damp towel and allow to rest for 30 minutes.
  • Preheat your oven to 500 degrees F (260 degrees C with an ungreased baking sheet on the center rack.
  • Flatten each ball into an 8-inch thin, almost see-through circle; avoid thick dough to prevent bubbling like pita bread.
  • Arrange as many crackers as you can on the hot baking sheet pulled out from the oven. Bake until lightly browned with small bubbles on top, approximately 3 minutes.
  • Take the crackers out of the oven and place them on a wire rack to cool.
  • Continue to follow the same process for the remaining batches, making sure to adjust the thickness of the dough as needed.
