Savory Southern skillet bread with pork, onion, orange juice, buttermilk, and a touch of honey for a deliciously unique flavor profile.
Ingredients:
  • 0.5 pound finely chopped pork
  • 1 small onion, chopped
  • 1.5 cups cornmeal
  • 0.5 cup all-purpose flour
  • 3 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 2 eggs, beaten
  • 0.5 cup buttermilk
  • 1 cup orange juice
Instructions:
  • Preheat oven to 350°F (175°C) for a perfect bake.
  • In a 10-inch oven-proof skillet, crisp up the pork. Add the onion and cook until tender. Remove excess fat, saving 2 tablespoons.
  • In a large mixing bowl, combine cornmeal, flour, baking powder, baking soda, and salt. Mix in eggs, honey, buttermilk, and juice until well combined. Gently fold in pork and onions.
  • Pour the reserved fat back into the hot skillet, add the batter, then transfer the skillet to the oven to bake for 30 to 35 minutes.
