Delicious sausage, apple, and cranberry stuffing enhances maple-roasted turkey.
Ingredients:
  • 1 pound sweet Italian sausage, casings removed
  • 0.25 cup butter
  • 6 cups coarsely chopped leeks
  • 3 tart apples - peeled, cored and chopped
  • 2 cups chopped celery
  • 4 teaspoons poultry seasoning
  • 2 teaspoons dried rosemary, crushed
  • 1 cup dried cranberries
  • 12 cups white bread cubes, baked until slightly dry
  • 1.3333333730698 cups chicken stock
  • salt and black pepper to taste
Instructions:
  • In a large skillet over medium heat, cook the sausage, crumbling it coarsely, for about 10 minutes. Transfer the cooked sausage to a large bowl using a slotted spoon and discard any excess grease from the pan.
  • In the same pan, melt butter and sauté leeks or onions, apples, celery, and poultry seasoning until softened for about 10 minutes. Add rosemary, dried cranberries, and cooked sausage, then combine with dried bread cubes. Season with salt and pepper to taste and moisten mixture with chicken stock.
  • Prepare the turkey by generously stuffing it with 5 cups of stuffing for a 14-pound bird. If necessary, moisten the stuffing with extra chicken stock. Bake any extra stuffing in a covered, buttered casserole at 350°F for 45 minutes, then uncover and bake for an additional 15 minutes until the top is nicely browned.
