Elevate your holiday feast with zesty citrus and cranberry glazed ham.
Ingredients:
  • 4.5kg (about 1/2) rump end leg ham
  • 20-25 whole cloves
  • 2 oranges
  • 275g jar cranberry sauce
  • 100g (1/2 cup, firmly packed) brown sugar
  • 23.40 gm wholegrain mustard
  • Crusty bread, to serve
  • Mixed salad leaves, to serve
  • Extra cranberry sauce, to serve
Instructions:
  • Preheat your oven to 190°C. Carefully peel off the ham rind using a small, sharp knife. Then, create large diamond-shaped cuts on the top of the ham and place a clove in the center of each diamond.
  • Zest the oranges using a zester or vegetable peeler and remove the white pith. Cut the rind into very thin strips. Juice 1 orange and set aside 2 tablespoons of the juice.
  • Set the ham on a roasting rack inside a large roasting pan and pour in 60ml (1/4 cup) water to ensure the glaze doesn't burn on the bottom of the pan.
  • In a small bowl, mix together orange rind, reserved orange juice, cranberry sauce, sugar, and mustard. Brush half of the glaze onto the ham. Bake in a preheated oven for 30 minutes. Brush the remaining glaze onto the ham, then bake for an additional 30 minutes or until the glaze caramelizes.
  • Garnish the ham with bread, salad leaves, and extra cranberry sauce before serving.
