Soft and buttery cranberry orange cookies with tart cranberries, crunchy walnuts, and a sweet orange glaze.
Ingredients:
  • 1 cup unsalted butter, softened
  • 1 cup white sugar
  • 0.5 cup packed brown sugar
  • 1 large egg
  • 2 tablespoons orange juice
  • 1 teaspoon grated orange zest
  • 2.5 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 2 cups chopped cranberries
  • 0.5 cup chopped walnuts
  • 1.5 cups confectioners' sugar
  • 3 tablespoons orange juice
  • 0.5 teaspoon grated orange zest
Instructions:
  • Preheat the oven to 375°F (190°C).
  • Prepare the cookie dough: In a mixing bowl, combine butter, white sugar, and brown sugar until creamy. Add the egg and mix well. Incorporate the orange juice and zest.
  • In a separate bowl, combine flour, baking soda, and salt. Add the flour mixture to the butter mixture and mix until combined. Fold in cranberries and walnuts until evenly distributed.
  • Spoon rounded tablespoonfuls of dough onto ungreased cookie sheets, leaving 2 inches of space between each.
  • Bake in the preheated oven, rotating racks halfway, until edges turn golden, about 12 to 14 minutes. Let cookies cool completely on wire racks.
  • Prepare the glaze by combining confectioners' sugar, orange juice, and zest in a small bowl until well combined and smooth.
  • Spread the delicious glaze evenly on the cooled cookies and allow it to set beautifully.
