Transform Thanksgiving cranberry leftovers into delicious cranberry apple oatmeal with crunchy walnuts for a comforting breakfast option.
Ingredients:
  • 2 cups water
  • 1 apple, cored and diced
  • 0.5 cup fresh cranberries
  • 1 cup quick-cooking oats
  • 0.25 cup brown sugar
  • 0.25 teaspoon ground nutmeg
  • 1 pinch salt
  • 0.5 cup chopped walnuts
Instructions:
  • In a bowl, delightfully cook water, apple, and cranberries until cranberries burst and apple is tender, approximately 5 minutes. Lower the heat and stir in oats, brown sugar, cinnamon, nutmeg, and salt. Keep stirring until oatmeal thickens and water is absorbed, for about 2 to 3 minutes. Sprinkle some walnuts on top of the oatmeal before serving.
