Easy and fun cranberry-apple scones made with muffin mix, perfect for baking with kids. Enjoy with your favorite coffee or tea.
Ingredients:
  • 2 cups all-purpose flour
  • 0.5 cup orange-cranberry muffin mix (such as Krusteaz®)
  • 0.25 cup packed brown sugar
  • 1 tablespoon baking powder
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon salt
  • 5 tablespoons butter, chilled and diced
  • 1 apple, diced
  • 0.33333334326744 cup sweetened dried cranberries (such as Craisins®)
  • 0.75 cup half-and-half
  • 1 egg
  • 1 egg white
  • 1 tablespoon confectioners' sugar
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and give your baking sheet a light coat of grease.
  • Combine flour, muffin mix, brown sugar, baking powder, nutmeg, and salt in a bowl. Use a pastry blender or fork to cut in butter until mixture resembles coarse crumbs.
  • Mix together the apples and dried cranberries in a bowl, then combine them with the flour mixture.
  • In a bowl, whisk together half-and-half and egg until frothy. Gently mix into the flour mixture until a dough forms, using a rubber spatula. Knead the dough a few times. Shape the dough into a rectangle on a floured surface and cut it into 8 triangles. Place the triangles on a baking sheet.
  • Combine the egg white and confectioners' sugar in a bowl, then brush the mixture over each triangle.
  • Bake the scones in the preheated oven until they turn golden brown, for approximately 20 minutes.
