Cranberry lemon slice

Satisfy cravings with this irresistible fridge-friendly slice.
Ingredients:
  • 500.00 ml natural muesli
  • 250.00 ml dried cranberries
  • 65.00 gm shredded coconut
  • 125g butter
  • 90.00 gm brown sugar
  • 450.00 gm icing sugar mixture, sifted
  • 60g butter, softened
  • 52.50 gm lemon juice
Instructions:
  • Preheat your oven to 160°C. Grease a 20cm x 30cm slab pan that is 3cm deep, then line the base and sides with baking paper, leaving a 2cm overhang on both long ends.
  • In a bowl, mix muesli, dried cranberries, and coconut. Create a well in the center. In a saucepan over low heat, melt butter and dissolve sugar for about 2 minutes. Pour the butter mixture into the muesli mixture and stir until combined.
  • Spread the mixture evenly in the prepared pan, using a spoon to press it down firmly. Bake for 20 minutes or until golden and set. Let it cool in the pan before serving.
  • To prepare the lemon icing, combine icing sugar, butter, lemon juice, and 1 teaspoon of cold water in a bowl. Use a wooden spoon to beat until smooth. Spread the icing over the slice and refrigerate for 30 minutes to set. Lift the slice out using baking paper, cut into pieces, and serve. Enjoy!
