Irresistible cranberry lemon bars perfect for year-round enjoyment - a must-have freezer treat with fresh cranberries!
Ingredients:
  • 1/2 cup unsalted butter, melted
  • 3 tablespoons granulated sugar
  • 1 teaspoon almond extract
  • 1/2 teaspoon salt, or to taste
  • 1 cup all-purpose flour
Instructions:
  • Preheat the oven to 350 degrees F (180 degrees C) and prepare an 8x8-inch pan by greasing it or lining it with parchment paper for easy bar removal.
  • Combine melted butter, 3 tablespoons sugar, almond extract, and salt in a bowl, then mix in flour until fully combined. Press the dough evenly into the prepared pan.
  • Bake until edges are lightly browned, about 15 to 20 minutes. Then, remove from the oven and set aside.
  • In a small saucepan, blend cranberries, 1/4 cup sugar, water, and 1 1/2 tablespoons lemon zest. Cook on medium heat, stirring frequently. Press down on the cranberries with a spoon as they pop until the mixture is smooth, about 9 to 12 minutes. Set the mixture aside.
  • Combine eggs, 3/4 cup sugar, lemon juice, flour, and 1 tablespoon lemon zest in a bowl and whisk until smooth and fully incorporated.
  • Spread the cranberry mixture evenly over the crust, then generously pour the lemon layer mixture on top.
  • Continue baking in the oven until the filling is firm, for about 20 to 25 minutes.
  • Allow the dish to fully cool in the pan, then use a knife to gently release the edges. Cut into squares and sprinkle with confectioners sugar just before serving. Store any extra portions in an airtight container.
