Holiday cranberry caramels, a festive twist with pineapple option.
Ingredients:
  • 1 cup finely chopped cranberries
  • 1 cup white sugar
  • 1 cup corn syrup (such as Karo®)
  • 0.25 teaspoon salt
  • 0.5 cup heavy whipping cream
  • 0.25 cup butter
Instructions:
  • Grease a 9x5-inch loaf pan with butter.
  • In a large saucepan, mix cranberries, sugar, corn syrup, and salt. Bring to a boil, then cook until the mixture reaches 245 degrees F or until a small amount dropped in cold water forms a soft ball that flattens. This should take around 20-30 minutes.
  • Slowly incorporate the cream and butter into the cranberry mixture while maintaining a consistent boil. Cook until the temperature reaches 245 degrees F (118 degrees C) once more, about 5 to 10 minutes. Transfer the mixture into the loaf pan. Allow the caramel to cool in the pan on a wire rack for approximately 1 hour. Then, remove the caramel from the pan, slice, and wrap individually or serve directly from the pan.
