Try delicious almond coffee cakes made with Original Bisquick® mix and topped with a nutty oats mixture.
Ingredients:
  • 6 tablespoons butter or margarine, softened
  • 3/4 cup packed brown sugar
  • 2 eggs
  • 1 teaspoon almond extract
  • 2 cups Original Bisquick™ mix
  • 3/4 cup milk
  • 1 cup fresh or frozen (do not thaw) cranberries
  • 1/3 cup old-fashioned oats
  • 1/3 cup sliced almonds, toasted
  • 1/4 cup packed brown sugar
  • 2 tablespoons butter or margarine, softened
Instructions:
  • Preheat oven to 350°F and generously coat a 9-inch springform pan with cooking spray. In a large bowl, use an electric mixer to cream together 6 tablespoons of butter and 3/4 cup of brown sugar until smooth. Add eggs one at a time, mixing well after each addition. Mix in almond extract, then blend in Bisquick mix and milk on low speed until you have a smooth batter. Gently fold in cranberries, then spread the batter evenly in the pan.
  • Combine all streusel ingredients in a small bowl and use a fork to mix until crumbly. Sprinkle over the batter.
  • Bake for 38-42 minutes or until a toothpick inserted in the center comes out clean. Allow to cool for 10 minutes, then remove the pan's side before serving warm.
