Cranberry-Orange Gelatin Salad

Colorful, creamy fruit treats perfect as a refreshing salad or dessert.
Ingredients:
  • 1 can (20 ounces) crushed pineapple in juice
  • 2 packages (3 ounces each) cranberry-flavored gelatin
  • 14 ice cubes
  • 2 cups fresh or frozen cranberries
  • 1 unpeeled seedless orange, cut into 1-inch pieces
  • Additional fresh cranberries, orange slices and mint sprigs, if desired
  • 2/3 cup vanilla yogurt
  • 1/3 cup reduced-fat sour cream
Instructions:
  • Separate pineapple from its juice, keeping the juice in a 4-cup measuring cup. Set aside the pineapple. Add water to the pineapple juice to make 2 1/2 cups, then transfer to a 1-quart saucepan and bring to a boil.
  • In a 11 x 7 x 1 1/2 inch (2-quart size) rectangular baking dish, sprinkle gelatin evenly. Pour in the boiling juice mixture and stir well until gelatin dissolves completely. Add ice cubes and stir until melted and gelatin starts to thicken. Chill in the freezer for 10 to 15 minutes, stirring occasionally, until slightly thickened.
  • In a food processor, combine 2 cups of cranberries and the orange. Pulse until coarsely chopped; set aside.
  • Take the gelatin out of the freezer. Mix the cranberry mixture and pineapple into the gelatin. Cover with plastic wrap and chill in the refrigerator for at least 30 minutes until set. Top with cranberries, orange slices, and mint. Serve with Creamy Topping.
