Delicious party wafers with a sweet and savory twist, made with only six ingredients.
Ingredients:
  • 1 1/2 cups chopped pecans
  • 1 1/2 cups coarsely chopped sweetened dried cranberries
  • 2 cups butter, softened
  • 4 cups shredded extra-sharp Cheddar cheese (16 oz)
  • 1 1/2 teaspoons salt
  • 4 cups Gold Medal™ all-purpose flour
Instructions:
  • Toast pecans in a dry skillet over medium heat for 5 to 7 minutes, stirring often until they start to brown. Continue stirring constantly until nuts are lightly browned. Let them cool.
  • Place the cranberries in a heatproof bowl and cover them with boiling water. Allow them to sit for 15 minutes, then drain and gently pat dry with paper towels.
  • In a large bowl, mix butter, cheese, and salt using an electric mixer until well combined. Slowly add flour and mix until just incorporated. Fold in cranberries and toasted pecans. Shape the dough into 4 logs (12 inches each) and wrap them in plastic wrap. Chill in the fridge for a minimum of 8 hours or up to 3 days.
  • Preheat the oven to 350°F. Line cookie sheets with parchment paper. Cut the logs into 1/4-inch slices and place them on the prepared sheets. Bake for 13 to 15 minutes until lightly browned. Transfer to cooling racks to cool completely.
