Cranberry-Pistachio Candy Squares

Irresistible homemade candies, perfect for gifting or special occasions. Quick and easy recipe yields eight dozen in just 20 minutes!
Ingredients:
  • 1 bag (12 oz) semisweet chocolate chips
  • 1 cup butter or margarine
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup evaporated milk
  • 1 box (3.4 oz) instant pistachio pudding and pie filling mix
  • 4 cups powdered sugar
  • 1/2 cup chopped shelled pistachios
  • 1 package (20 oz) vanilla-flavored candy coating or almond bark, chopped
  • 3/4 cup sweetened dried cranberries
Instructions:
  • Prepare the 13x9-inch pan by lining it with foil and spraying the foil with cooking spray. In a 1 1/2-quart saucepan, melt the chocolate chips and 1/2 cup of butter over low heat, stirring frequently until smooth. Take off the heat. Use a wire whisk to beat in 4 oz (1/2 package) of cream cheese until smooth. Spread the mixture in the pan and freeze until set, approximately 30 minutes.
  • In a 2-quart saucepan, melt the remaining 1/2 cup of butter. Take off the heat. Mix in evaporated milk and pudding mix until smooth. Add powdered sugar and stir until well combined. Fold in pistachios. Gently spread the thick pudding mixture over the frozen chocolate layer. Chill in the refrigerator for 30 minutes.
  • In a separate 2-quart saucepan, gently melt almond bark over low heat, stirring continuously until it becomes smooth. Add the remaining half package of cream cheese and the cranberries. Pour this mixture over the chilled pudding layer, ensuring it covers the entire surface. Refrigerate until set, for a minimum of 3 hours.
  • Lift the foil to easily remove the candy from the pan. Cut the candy into 1-inch squares and transfer them away from the foil. Chill in the refrigerator for storage.
