Delicious cranberry pistachio bark, ideal for gifting.
Ingredients:
  • 2 lb white chocolate-flavored candy coating, coarsely chopped
  • 1 1/2 cups dried cranberries or cherries
  • 1 1/2 cups salted pistachio nuts
  • 1 teaspoon grated orange peel
Instructions:
  • Prepare the cookie sheet by spraying it with cooking spray and lining it with waxed paper. In a large microwave-safe bowl, heat the candy coating on Medium (50%) power for 1 minute. Stir well and continue to microwave for another minute, stirring after 30 seconds, until smooth.
  • Combine cranberries, nuts, and orange peel into the mixture, then spread it onto a cookie sheet. Chill in the refrigerator for 30 minutes. Once set, break it into 2-inch pieces and store in an airtight container at room temperature.
