Apple-Cranberry-Pistachio Bread

Festive quick bread with colorful fruit and nuts ready in 20 minutes. Perfect for breakfast or Christmas dinner.
Ingredients:
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup vegetable oil
  • 1/3 cup apple cider or apple juice
  • 2 eggs, beaten
  • 1 cup shredded peeled apple (1 medium)
  • 1/2 cup sweetened dried cranberries
  • 1/3 cup chopped pistachios
  • 1/2 cup powdered sugar
  • 2 to 3 teaspoons apple cider or apple juice
  • 2 tablespoons finely chopped pistachios
Instructions:
  • Preheat your oven to 350°F. Grease and flour the bottom of an 8x4-inch loaf pan. In a large bowl, use a wooden spoon to combine flour, granulated sugar, baking powder, and salt. Mix in oil, 1/3 cup cider, and eggs until smooth. Gently fold in apple, cranberries, and 1/3 cup pistachios. Spread the batter evenly in the pan.
  • Bake for 50 to 60 minutes until a toothpick inserted in the center comes out clean. Allow to cool in the pan for 10 minutes, then remove and cool completely for about 1 hour and 30 minutes.
  • Combine powdered sugar with just the right amount of 2 to 3 teaspoons of cider in a small bowl until you achieve the desired glaze consistency. Spread over the top of the bread and sprinkle with 2 tablespoons of pistachios.
