Elevate traditional orange scones with tart cranberries and juicy pomegranate juice for a delightful twist.
Ingredients:
  • 3 cups self-rising flour
  • 1 stick unsalted butter
  • 0.5 cup chopped fresh cranberries
  • 1 orange, zested
  • 0.75 cup buttermilk, or more as needed
  • 0.25 cup cranberry-pomegranate juice
  • 1 cup powdered sugar
  • 2 tablespoons cranberry-pomegranate juice, or more as needed
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and lay down a sheet of parchment paper on a baking tray.
  • In a large bowl, mix together the flour and sugar. Incorporate the butter until the mixture resembles coarse crumbs. Stir in the cranberries and orange zest.
  • Combine the luscious flavors of 1/2 cup buttermilk and 1/4 cup cranberry-pomegranate juice, then pour the mixture over the flour. Stir until a soft dough forms, adding additional buttermilk as necessary for the perfect consistency.
  • Transfer the dough onto a floured board, shape it into a circle, then cut it into 10 wedges and place them on the baking sheet.
  • Bake in the oven until beautifully golden, for 12 to 20 minutes.
  • Combine powdered sugar and 2 tablespoons of cranberry-pomegranate juice, then brush the glaze onto the hot scones as they bake.
