Crispy smashed potatoes topped with smoked salmon, red onions, and capers - a gourmet twist on a classic appetizer!
Ingredients:
  • For the potatoes
  • 1 1/2 pounds petite gold potatoes
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • For the toppings
  • 6 ounces whipped cream cheese
  • 5 ounces hot- or cold-smoked salmon
  • 1/4 cup red onion, finely diced
  • 2 tablespoons capers, drained
Instructions:
  • To cook the potatoes, place them in a medium pot and cover them with water by at least 1 inch. Bring to a boil over high heat, then simmer uncovered for 15-20 minutes until tender. Drain the potatoes in a colander.
  • Preheat the oven to 425ºF and line a large baking sheet with parchment paper.
  • Flatten the hot potatoes: Transfer the hot potatoes onto the baking sheet and gently press them to about 1/2-inch thickness using the base of a drinking glass, measuring cup, or similar flat object. Aim for 2-inch rounds as a solid base for toppings. Use your hands to reassemble any potatoes that break apart.
  • Coat the smashed potatoes with 1 tablespoon of olive oil, then sprinkle with 1/4 teaspoon salt and 1/8 teaspoon black pepper. Gently toss the potatoes to ensure they are evenly seasoned with the remaining olive oil, salt, and black pepper.
  • Achieve perfectly crispy and golden-brown edges by baking the potatoes for 20 to 25 minutes.
  • Allow the potatoes to cool on the baking sheet for 15 minutes. Then, generously dollop each potato with whipped cream cheese. Finish by topping the cream cheese with a portion of smoked salmon, a scattering of red onion, and a few capers.
  • Presentation: Gently move the flavorful potatoes to a beautiful serving platter and enjoy promptly.
