Cream of Broccoli Soup

Creamy broccoli soup ready in 25 minutes - a perfect appetizer.
Ingredients:
  • 2 tablespoons butter or margarine
  • 1 medium onion, chopped (1/2 cup)
  • 2 medium carrots, thinly sliced (1 cup)
  • 2 teaspoons mustard seed
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3/4 pound broccoli, coarsely chopped (3 1/2 cups) or 2 10 ounce packages frozen, chopped broccoli
  • 1 can (14 1/2 ounces) chicken broth
  • 1 cup water
  • 2 teaspoons lemon juice
  • 1/4 cup sour cream
Instructions:
  • In a 3-quart saucepan over medium heat, melt butter. Cook onion and carrots in the butter for about 5 minutes until the onion is tender, stirring occasionally. Add mustard seed, salt, pepper, broccoli, broth, and water. Bring to a boil, then reduce heat, cover, and simmer for about 10 minutes until the broccoli is tender.
  • Blend one-third of the broccoli mixture in a blender on high speed until smooth. Transfer the mixture to a bowl. Repeat this process with the remaining soup in small batches until all of it is pureed.
  • Pour the blended mixture back into the saucepan and combine with lemon juice. Gently warm over low heat until just hot. Finally, fold in the sour cream.
