Creamy garlic potato soup with rich chicken stock base.
Ingredients:
  • 0.75 cup garlic cloves, peeled
  • 3 tablespoons olive oil
  • 2.5 cups chicken broth
  • 1 cup white wine
  • 2.5 cups milk
  • 1 cup heavy whipping cream
  • 0.5 cup peeled and cubed potatoes
Instructions:
  • Pulse garlic in a food processor until a coarse paste forms, scraping down the sides as needed.
  • In a large saucepan over low heat, gently warm the oil. Add the garlic paste and cook until it turns slightly golden, stirring constantly. Pour in the chicken broth and wine, then bring the mixture to a boil.
  • Lower the heat and let it simmer for 30 minutes. Add in the milk, cream, and potato, and continue to simmer for an additional 30 minutes.
  • Blend the soup until smooth, then transfer it back to the saucepan to simmer. Season with salt and pepper to your liking. Serve in bowls with buttered French bread on the side.
