Indulgent cream of morel mushroom soup with garlic-infused butter - a luxurious springtime delight.
Ingredients:
  • 1 tablespoon minced garlic
  • 1 large onion, diced
  • 8 ounces fresh morel mushrooms, sliced
  • 1 tablespoon chicken soup base
  • 1 tablespoon all-purpose flour
  • 2 cups water
  • 2 cups heavy cream
  • 0.125 teaspoon ground dried thyme
  • salt to taste
  • 2 teaspoons ground black pepper
Instructions:
  • In a large pot over medium heat, melt butter until bubbly. Add garlic, onion, and morels, stirring frequently until onions are soft and translucent, about 5 minutes. Mix in chicken soup base and flour; cook for an additional 1 to 2 minutes. Pour in water and cream, bring to a gentle simmer, and cook for 5 minutes.
  • Blend half of the soup in the blender in small batches, making sure not to fill it more than halfway each time. Pour the puree back into the pot. Simmer on low for 10 to 15 minutes. Season with thyme, salt, and pepper to taste before serving.
