Whip up a quick and vibrant cream of spinach soup using everyday ingredients for a healthy and versatile meal option - hot or chilled.
Ingredients:
  • 1 cup chopped onion
  • 2 tablespoons butter
  • 2 cups chopped fresh spinach - packed - (or 1 10-oz package frozen spinach, thawed)
  • 3 medium potatoes, peeled and quartered (about 1 pound)
  • 1 1/2 cups chicken broth (or vegetable broth for vegetarian option)
  • 1 1/2 cups water
  • 2 chicken bouillon cubes (or vegetable bouillon cubes for vegetarian option)
  • 2 cups half-and-half
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 3/4 cup sour cream
  • Optional: chopped chives and/or ground allspice for garnish
Instructions:
  • Sauté the onion in butter in a large saucepan over medium heat until translucent, about 4 minutes.
  • Prepare the soup: Combine potatoes, chicken broth, water, and bouillon cubes in a pot. Bring to a boil, then simmer covered over low heat for 20 minutes until potatoes are tender. Stir in spinach and cook for an additional 2 to 4 minutes until spinach is tender.
  • Blend the soup in batches until smooth. Pour back into the saucepan and stir in the half and half, along with the salt and pepper.
  • Incorporate the sour cream: Bring the mixture just before simmering over low heat and whisk in the sour cream. Consider using an immersion blender for smoother incorporation. Serve the soup hot or chilled, and top with chopped chives, allspice, or a dollop of extra sour cream.
