Easy chocolate cupcakes piped with creamy filling, topped with frosting.
Ingredients:
  • 3 cups all-purpose flour
  • 2 cups white sugar
  • 0.33333334326744 cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup milk
  • 1 cup water
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 0.25 cup shortening
  • 2 cups confectioners' sugar
  • 1 pinch salt
  • 3 tablespoons milk
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and prepare 36 muffin cups by lining them with paper liners.
  • Combine flour, sugar, cocoa, baking soda, and salt in a large bowl. Create a well in the center and add eggs, milk, water, oil, and vanilla. Mix until well combined.
  • Divide the batter evenly among the muffin cups, filling each halfway.
  • Bake in the preheated oven for 15 to 20 minutes or until a toothpick inserted into the center comes out clean. Let cool before serving.
  • Prepare the filling by combining butter and shortening in a large bowl until smooth. Mix in confectioners' sugar and salt. Slowly add milk and vanilla while continuing to beat until the mixture is light and fluffy. Transfer the filling to a pastry bag fitted with a small tip.
  • Fill the center of each cooled cupcake by inserting a tip through the bottom of the paper liner.
