Indulge in creamy slow-cooked red potatoes with vibrant green peas, ideal as a flavorful side dish.
Ingredients:
  • 2 pounds small red potatoes (2 to 3 inches in diameter), cut into 1/4-inch slices (8 cups)
  • 4 medium green onions, sliced (1/4 cup)
  • 2 cloves garlic, finely chopped
  • 1 container (10 ounces) refrigerated Alfredo pasta sauce
  • 1/2 cup half-and-half or milk
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 1/2 cups frozen green peas (from 1-pound bag)
Instructions:
  • Prepare your slow cooker by generously spraying it with cooking spray. Start layering with half of the potatoes, onions, and garlic in the cooker. Next, combine pasta sauce, half-and-half, salt, and pepper, then spoon half of the mixture over the layered potatoes and onions. Continue layering by adding the remaining potatoes, onions, garlic, and the sauce mixture on top. Remember not to stir the ingredients together.
  • Cook on high heat setting, covered, for 3 to 4 hours.
  • 30 minutes before serving, generously scatter peas on top of the savory potato mixture. Cover and cook on high heat for 20 to 30 minutes, or until the peas are heated through. Give it a gentle stir right before serving to blend all the flavors beautifully.
