Tantalizing spinach and tangy currants create a quick and delicious family favorite side dish!
Ingredients:
  • 9.20 gm olive oil
  • 1 medium brown onion, halved, thinly sliced
  • 40.00 ml currants
  • 400g baby spinach
  • 126.25 gm thickened cream
Instructions:
  • In a large frying pan over medium-high heat, sauté the onion, garlic, and currants in heated oil for 2 to 3 minutes until the onion softens. Then, add the spinach and cook for an additional 2 to 3 minutes until it starts to wilt.
  • Pour in the luxurious cream and generously season with salt and pepper. Let the mixture gently bubble to perfection. Lower the heat and let it simmer for just a minute until the spinach wilts and the sauce thickens slightly. Serve the delightful dish.
