Indulgent asparagus potato soup with creamy cheese, ready in just 30 minutes for a cozy and satisfying meal.
Ingredients:
  • 3 medium russet potatoes, peeled and chopped
  • 1.75 cups chicken broth
  • 0.33333334326744 cup chopped onion
  • 1 teaspoon kosher salt
  • 0.125 teaspoon ground nutmeg
  • 1 (12 ounce) package frozen cut asparagus
  • 1.5 cups heavy cream
  • 4 ounces whipped cream cheese
Instructions:
  • In a large pot, mix together potatoes, chicken broth, onion, salt, and nutmeg. Bring to a boil, then lower the heat and cook covered until potatoes are tender, about 8 to 10 minutes.
  • Add the fresh asparagus to the pot and bring it back to a boil. Lower the heat and let it simmer with the lid on until the vegetables are tender, approximately 5 minutes.
  • Gently incorporate heavy cream and cream cheese until melted, being careful not to boil.
