Creamy asparagus soup made with rich stock, onion, thyme, and a splash of dry vermouth for an elegant touch.
Ingredients:
  • 2 lbs asparagus, trimmed of woody stem bottoms
  • 1 large yellow onion, chopped (1 1/2 to 2 cups chopped)
  • 1 teaspoon minced garlic, or 1 Tbsp minced green garlic
  • 3 Tbsp butter
  • 4 cups chicken broth  or  vegetable broth  (vegetarian option)
  • 1 cup water
  • 2 sprigs of fresh thyme
  • 1 bay leaf
  • 1/4 cup chopped fresh parsley
  • 1/4 cup heavy cream or full-fat sour cream
  • 1 Tbsp dry vermouth
  • 1 teaspoon lemon juice
  • 1/2 teaspoon black pepper (more to taste)
  • 1 teaspoon salt (more to taste)
Instructions:
  • Separate asparagus tips and set aside. Slice the remaining asparagus stalks into 1/4-inch rounds.
  • In a large pot over medium heat, melt butter. Cook onions until translucent, about 5 minutes. Add garlic and cook for another minute.
  • Add the chopped asparagus (excluding the spear tips) to the onions, then season with salt and pepper to taste. Cook for an additional 5 minutes.
  • Pour in the broth and water, then add thyme sprigs and bay leaf to the pot. Bring to a boil, then lower to a simmer. Cook covered until asparagus are tender, around 10 minutes.
  • Add the chopped parsley and gently fold it into the dish just before serving.
  • Cook asparagus tips briefly in boiling, salted water until just tender, about 2-4 minutes depending on size. Drain and rinse with cool water to stop cooking. Set aside.
  • To purée the soup, discard the bay leaf and thyme sprigs. Use an immersion blender or upright blender, working in batches if necessary. If using an upright blender, blend in small portions, filling only up to a third of the bowl, and ensure the lid is securely held down. For a smoother texture, strain the puréed soup through a sieve or food mill if desired.
  • Incorporate cream, vermouth, and lemon juice into the mixture. Add a touch of salt and pepper to enhance the flavors. Top it off with asparagus tips for a delightful presentation. If you enjoyed this recipe, please consider rating and commenting below!
