Creamy Asparagus Soup

Indulge in a rich asparagus soup with flavorful Progresso® chicken broth - ideal for a satisfying meal.
Ingredients:
  • 1/4 cup butter or margarine
  • 1/2 cup chopped celery
  • 2 tablespoons all-purpose flour
  • 2 1/2 cups Progresso™ chicken broth (from 32-oz carton)
  • 2 cans (15 oz each) green asparagus spears, drained
  • 1 cup half-and-half
Instructions:
  • In a 3-quart saucepan, melt butter over medium heat. Add onion and celery and cook for 4 to 5 minutes until vegetables are crisp-tender. Stir in flour and cook for 1 minute, stirring constantly. Add broth and cook for 5 to 7 minutes until thoroughly heated, stirring constantly.
  • Take the saucepan off the heat, then mix in the asparagus. Blend the asparagus mixture in a food processor or blender until smooth. You can blend it in batches if needed. Transfer the mixture back to the saucepan.
  • Add the half-and-half and simmer for 5 to 8 minutes, stirring occasionally, until the mixture slightly thickens and is thoroughly heated.
