Creamy bacon spaghetti with poached eggs

Elevate this family-friendly dish with delicious poached eggs and flavorful bacon and herbs.
Ingredients:
  • 400g spaghetti
  • 40.00 ml white vinegar
  • 4 fresh eggs
  • 4 bacon rashers, rind removed, cut into thin strips
  • 250ml (1 cup) thickened cream
  • 3 shallots, ends trimmed, thinly sliced
  • 40.00 ml chopped fresh continental parsley
Instructions:
  • Boil pasta in a saucepan of water following package instructions until al dente. Drain and return to the pan.
  • Bring a medium saucepan of water to a boil and add vinegar. Crack 1 egg into a small bowl. Create a whirlpool in the water using a large spoon and gently pour the egg into the center. Cook for 4 minutes for a soft yolk or to your desired doneness. Use a slotted spoon to transfer the egg to a plate and cover with foil to keep warm. Repeat with the remaining eggs.
  • - Heat a frying pan over medium-high heat. - Cook the bacon, stirring, for 4-5 minutes until golden and crisp. - Stir in the garlic and cook for 30 seconds until aromatic. - Pour in the cream and bring to a boil. - Simmer for 2-3 minutes until the sauce thickens. - Remove from heat and stir in the shallot and parsley.
  • Combine the cream mixture with the pasta until evenly coated. Portion the pasta into serving bowls and finish with the poached eggs on top before serving.
