Pasta with peas, bacon, mint & lemon

Start your week right with creamy bacon and mint pasta.
Ingredients:
  • 400g spaghetti
  • 150g (1 cup) frozen baby peas, thawed
  • 250g Short Cut Bacon, trimmed, finely chopped
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 100ml pouring cream
  • 1 tsp finely grated lemon rind
  • 40.00 ml chopped fresh mint
Instructions:
  • Boil the pasta in salted water as instructed on the packet until al dente. Toss in the peas during the final 2 minutes of cooking. Save 60ml (1/4 cup) of the cooking liquid. Transfer the pasta back to the pan.
  • Heat a non-stick frying pan over high heat until hot. Add the bacon and cook, stirring occasionally, for about 5 minutes until crispy. Remove the cooked bacon to drain on a paper towel-lined plate.
  • Reduce heat to medium. Saute onions until soft, about 5 minutes. Stir in garlic and cook for 1 minute. Add bacon, cream, lemon rind, and reserved liquid. Simmer for 2 minutes.
  • Stir the bacon mixture and mint into the pasta until well combined. Serve in bowls and season with salt and pepper.
