Cream cheese-banana bread with pecan streusel swirl.
Ingredients:
  • 0.5 cup margarine, softened
  • 1 (8 ounce) package cream cheese, softened
  • 1.25 cups white sugar
  • 2 eggs
  • 1 cup mashed bananas
  • 1 teaspoon vanilla extract
  • 2.25 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.75 cup chopped pecans
  • 2 tablespoons brown sugar
  • 2 teaspoons ground cinnamon
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare two 8x4-inch loaf pans by greasing and flouring them.
  • Combine margarine and cream cheese until smooth. Slowly incorporate white sugar until mixture is light and fluffy. Beat in eggs one at a time. Mix in mashed bananas and vanilla. Fold in flour, baking powder, and baking soda until just moistened.
  • Combine chopped pecans, 2 tablespoons of brown sugar, and cinnamon in a small bowl.
  • Pour half of the batter evenly into each of the two loaf pans. Sprinkle the pecan mixture over the batter in the pans, then cover with the remaining batter.
  • Bake in the oven until a toothpick inserted in the center comes out clean, approximately 45 minutes.
