Creamy chicken carbonara: Quick family favorite with golden chicken in cream sauce. Classic carbonara with a twist - tender chicken, touch of cream. Perfect for busy nights or special occasions. Variations available like carbonara quiche and baked pumpkin.
Ingredients:
  • 500g Brand Penne
  • 18.20 gm Australian Extra Virgin Olive Oil
  • 500g RSPCA Approved Chicken Breast Fillets, cut into 2cm pieces
  • 250g short-cut bacon rashers, sliced
  • 2 garlic cloves, crushed
  • 250ml chicken stock
  • 2 Free Range Egg yolks
  • 185ml thickened cream
  • 10.00 gm Cornflour
  • 40g parmesan
  • 40.00 ml flat-leaf parsley, chopped
Instructions:
  • Prepare the Coles Brand Penne by boiling it in a saucepan of water according to the instructions on the packet. Then, drain the pasta.
  • Heat Red Island Australian Extra Virgin Olive Oil in a frying pan over medium heat. Cook chicken for 4 minutes, turning occasionally, until golden and fully cooked. Transfer to a plate. Cook bacon in the same pan, stirring occasionally, for 2 minutes or until golden and slightly crisp.
  • Combine minced garlic, Campbell's Real Stock Chicken, rich egg yolks, luscious cream, cornflour, and half of the savory parmesan in a bowl. Season generously. Gently place the chicken back in the pan over low heat, then pour in the egg mixture and pasta. Toss everything together for 1-2 minutes until the pasta is fully coated and the sauce thickens beautifully. Garnish with fresh parsley and sprinkle the remaining parmesan on top. Enjoy!
