Whip up a flavorful chicken enchilada soup using leftover chicken and canned chiles for a simple weeknight meal.
Ingredients:
  • 4 cups chopped cooked chicken breast
  • 1 (26 ounce) can condensed cream of chicken soup
  • 1 (15 ounce) can green enchilada sauce
  • 15 ounces milk
  • 1 (7 ounce) can diced green chiles
  • 6 (6 inch) corn tortillas, quartered
  • 0.25 teaspoon garlic powder
  • 1 (16 ounce) container light sour cream
Instructions:
  • In a large pot, combine chicken, condensed soup, enchilada sauce, milk, chiles, tortillas, and garlic powder. Bring to a boil, then simmer for 15 minutes.
  • Take the soup off the heat and mix in sour cream until smooth and fully combined.
