Elevate instant ramen with creamy mayo, eggs, peas, and carrots.
Ingredients:
  • 1 (3 ounce) package chicken flavored ramen noodles
  • 0.5 cup frozen peas and carrots
  • 2 tablespoons mayonnaise
Instructions:
  • Place the noodles in a microwave-safe bowl, breaking them into smaller pieces. Add water and the frozen vegetable mix. Microwave on high for 7 minutes.
  • In a large bowl, combine the egg, mayonnaise, and seasoning packet from the instant ramen and whisk together.
  • Temper the egg mixture by gently whisking in 1/4 cup of the boiling water from the noodles until combined. Then, slowly whisk in another 1/4 cup of boiling water until the egg is cooked and fully mixed.
  • Stir in the remaining liquid and noodles, then allow them to soak up the flavors until the noodles are al dente, approximately 3 minutes.
  • Serve the dish in 2 bowls and enjoy right away.
