Creamy chicken simmer pot

Flavorful stovetop chicken casserole with nutritious vegetables and bold spices.
Ingredients:
  • 600g chicken breast, cut into 3cm pieces
  • 3 garlic cloves, finely chopped
  • 40.00 ml finely grated fresh ginger
  • 1 tsp ground turmeric
  • 250ml salt-reduced chicken stock
  • 300ml Cooking Cream
  • 1 carrot, peeled, halved lengthways, cut into 5mm pieces
  • 1 sweet potato, peeled, cut into 2cm pieces
  • Steamed rice, to serve
  • Fresh continental parsley leaves, to serve
Instructions:
  • In a large frying pan over medium-high heat, heat half of the oil. Add the chicken and cook, stirring occasionally, until light golden and sealed on all sides, about 3-4 minutes. Transfer to a plate.
  • Heat the remaining oil in the pan over high heat. Sauté the onion for 2-3 minutes until soft but not colored. Add the garlic, ginger, and turmeric and cook for another minute until fragrant. Pour in the stock and cream, then return the chicken to the pan along with the carrot, sweet potato, and cinnamon. Bring to a boil, then simmer uncovered for 15-20 minutes until the veggies are tender and the sauce thickens. Season to taste.
  • Garnish with freshly chopped parsley and enjoy with a side of fluffy rice.
