Creamy Cilantro Salad Dressing

Elevate your salad with zesty cilantro and roasted pepper dressing, inspired by Mexican cuisine.
Ingredients:
  • 1.5 cups mayonnaise
  • 0.75 cup canola oil
  • 0.33333334326744 cup toasted pumpkin seeds
  • 0.25 cup distilled water
  • 0.25 cup red wine vinegar
  • 0.25 cup crumbled Cotija cheese
  • 2 roasted Anaheim chile peppers
  • 0.25 teaspoon freshly ground black pepper
  • 2 bunches fresh cilantro, rinsed and stemmed
Instructions:
  • In a blender, combine mayonnaise, canola oil, pumpkin seeds, water, vinegar, Cotija cheese, roasted chile peppers, garlic, salt, and pepper. Blend until smooth for about 1 minute. Gradually add cilantro in batches, blending each until fully incorporated before adding the next, taking 30 to 60 seconds per batch.
  • Transfer the dressing into a sealed container and chill in the refrigerator for at least 1 hour before serving.
