Southwest Chicken Salad with Creamy Cilantro Dressing

Creamy cilantro-lime yogurt dressing elevates this vibrant Southwestern chicken salad.
Ingredients:
  • 5 cups shredded romaine lettuce
  • 2 cups shredded deli rotisserie chicken
  • 1 can (15 oz) Progresso™ black beans, drained, rinsed
  • 1 can (11 oz) whole kernel corn with red and green peppers, drained and rinsed
  • 1 cup chopped tomato
  • 1/2 cup sliced green onions
  • 1/3 cup olive oil or canola oil
  • 1 1/2 cups finely chopped fresh cilantro leaves
  • 1 clove garlic, finely chopped (1 teaspoon)
  • 3 tablespoons lime juice
  • 1/2 cup Mountain High™ whole milk plain yoghurt
Instructions:
  • Combine Salad ingredients in a large bowl.
  • Place olive oil, cilantro, garlic, lime juice, and salt in a blender. Blend on high speed until smooth, stopping to scrape down the mixture if needed. Transfer the mixture to a small bowl and whisk in yogurt until smooth.
  • Toss salad mixture with dressing until well combined. Serve immediately, or chill for up to 1 hour before serving.
