Sauteed shrimp in creamy coconut curry sauce over rice. A delicious and quick dish for guests or weeknights.
Ingredients:
  • 1 tablespoon butter
  • 1 pound large shrimp, peeled and deveined
  • 1 cup chopped onion
  • 1 cup chopped red bell pepper
  • 3 tablespoons all-purpose flour
  • 1 tablespoon curry powder
  • 0.25 teaspoon freshly ground black pepper
  • 0.125 teaspoon salt, or more to taste
  • 1 cup chicken broth
  • 1 cup coconut milk
  • hot cooked rice
Instructions:
  • In a large skillet over medium heat, melt butter. Add shrimp and saute until they turn pink, about 3 to 5 minutes. Remove shrimp from the skillet and set aside.
  • Sauté onion and bell pepper in the skillet until crisp-tender for 3 to 5 minutes. Stir in flour, curry powder, pepper, and salt. Continue cooking and whisking constantly for 1 minute.
  • Slowly incorporate chicken broth and coconut milk while stirring gently; continue simmering until the sauce is thick and bubbling. Add cooked shrimp and cook over medium heat, stirring constantly until shrimp are heated through. Serve the flavorful curry over a bed of rice without delay.
