Seasonal pears shine in this delectable coconut rice dish.
Ingredients:
  • 4 plums, halved, stones removed
  • 45.00 gm brown sugar
  • 62.50 gm water
  • 2 makrut lime leaves, scored
  • Ginger, cut into 6 thin slices
  • 600ml Cooking Cream
  • 400ml coconut milk
  • 150.00 gm arborio rice
  • 107.50 gm caster sugar
  • 2 egg yolks
Instructions:
  • In a medium saucepan, gently simmer cooking cream, coconut milk, rice, and half of the sugar, stirring occasionally, until rice is tender, about 25-30 minutes. Take off the heat.
  • Cut each plum half into 3 wedges, then combine them in a frying pan with sugar, water, lime leaves, and ginger. Cook over medium heat, turning the plums halfway through until just tender and a syrup forms. Remove plums with a slotted spoon and set aside. Increase heat and simmer the syrup until slightly reduced. Return plums to the pan, then remove from heat. Keep warm before serving.
  • Combine the remaining sugar with the egg yolks, then mix in the rice. Cook on heat for an additional 3-4 minutes.
  • Serve the velvety rice topped with the luscious plums in bowls. Enjoy immediately.
