Elevate your holiday spread with these luxurious crab-filled appetizers!
Ingredients:
  • 2 packages (1.9 oz each) phyllo cups (30 shells total)
  • 2 slices bacon, coarsely chopped
  • 1/2 cup finely chopped white mushrooms
  • 1/2 cup finely chopped sweet onion
  • 1/2 cup Progresso™ chicken broth (from 32-oz carton)
  • 1 can (6 oz) lump crabmeat, drained and picked over
  • 4 oz cream cheese (from 8-oz package), softened
  • 2 cups chopped baby spinach
  • 1/2 cup shredded Parmesan cheese
  • 1 teaspoon lemon juice
  • 1 tablespoon finely chopped thyme leaves
Instructions:
  • Bake phyllo cups according to package instructions until crispy.
  • In a 10-inch skillet, crisp up the bacon over medium heat for 4 to 5 minutes. Transfer the bacon to a paper towel-lined plate using a slotted spoon. Next, add mushrooms and onion to the skillet with the bacon drippings. Cook for 3 to 4 minutes until the mushrooms and onion are tender and most of the liquid has evaporated.
  • Pour in the flavorful broth and simmer for 4 to 6 minutes until it's mostly absorbed. Gently fold in the crabmeat and cream cheese, stirring for 1 to 2 minutes until the cream cheese is melted. Add the spinach and cook until wilted and heated through. Sprinkle Parmesan cheese over the mixture, take it off the heat, and squeeze in the bright lemon juice.
  • Fill phyllo cups with generous portions of crab filling, then garnish with crispy bacon and fragrant thyme leaves.
