Bacon enhances the creamy gnocchi with rich flavors and depth.
Ingredients:
  • 4.60 gm olive oil
  • 2 garlic cloves, crushed
  • 1 brown onion, finely chopped
  • 6 rashers bacon, rind removed, chopped
  • 600g fresh gnocchi (see note)
  • 10.00 gm sundried tomato pesto
  • 10.00 gm basil pesto
  • 300ml carton light cream
  • 37.60 gm Light Sour Cream
  • 125.00 ml grated parmesan cheese
  • 62.50 ml basil leaves, torn
Instructions:
  • In a saucepan over medium heat, sauté garlic, onion, and bacon in oil until onion is tender and bacon is slightly crispy, about 5 minutes. Set aside off the heat.
  • Cook gnocchi in a large saucepan of boiling salted water as per packet instructions until al dente. Drain and return to saucepan.
  • Combine the savory bacon mixture, sun-dried tomato and basil pestos, cream, sour cream, and parmesan with the gnocchi. Gently heat and stir on low until everything is warmed through.
  • Gently combine basil, salt, and pepper into the gnocchi mixture. Spoon into serving bowls and enjoy!
