Gnocchi with creamy tomato and bacon sauce

Creamy winter pasta for cozy family dinners.
Ingredients:
  • 1 x 500g pkt potato gnocchi
  • 160ml (2/3 cup) light thickened cream
  • 40.00 gm water
  • 22.20 gm tomato paste
  • 6 shortcut rindless bacon rashers, thinly sliced
  • 150g 97% fat-free semi-dried tomatoes, thinly sliced
  • 30.00 ml toasted pine nuts
  • 40g (1 cup) baby spinach leaves
Instructions:
  • Boil gnocchi in a large saucepan of salted water according to package instructions until tender, then drain.
  • In a bowl, mix cream, water, and tomato paste. Heat a non-stick frying pan over medium heat. Cook bacon until crisp, about 5 minutes, stirring occasionally. Add the cream mixture, tomato, and pine nuts.
  • Combine the pillowy gnocchi and fresh spinach in the pan, cook while stirring for 2 minutes until the spinach wilts. Sprinkle with a dash of pepper. Serve this delightful dish in individual bowls.
