Elevate cauliflower gnocchi with creamy sun-dried tomato sauce, topped with fresh herbs for a rustic twist. Also delicious with regular gnocchi.
Ingredients:
  • 1 batch cauliflower gnocchi  (or regular  gnocchi ), homemade or store-bought
  • 1 tablespoon olive oil
  • 1/4 cup finely chopped shallots
  • 1 tablespoon minced garlic
  • 2/3 cup julienned sun-dried tomatoes, oil drained, divided
  • 1/2 cup unsalted vegetable stock
  • 1 cup half and half
  • 1/2 teaspoon sea salt
  • 1 teaspoon chopped fresh oregano, plus more for garnish  (or 1/2 teaspoon dried)
  • 1 tablespoon roughly chopped fresh basil, plus more for garnish ( or 1-1/2 teaspoons dried)
  • Black pepper to taste, for garnish
  • 1/4 cup shaved Pecorino Romano cheese
Instructions:
  • Bring a pot of salted water to a gentle boil. As the water heats up, prepare the sauce.
  • Prepare the sauce: In a large sauté pan over medium-low heat, heat 1 tablespoon of olive oil. Sauté shallots and garlic until fragrant and shallots are softened, about 1 to 2 minutes. Add 1/2 cup sun-dried tomatoes and sauté for 30 seconds. Pour in vegetable stock, half-and-half, and sea salt. Increase heat to medium-high. Simmer and stir occasionally until the sauce reduces and thickens, about 3 to 5 minutes.
  • Once the water is boiling, gently drop in the gnocchi and cook until they float, about 3 minutes. Drain the gnocchi using a slotted spoon and add them directly to the skillet with the sauce. Stir in the oregano and basil. Simmer the sauce for a few more minutes until it coats the gnocchi to perfection.
  • Garnish with tomatoes, cheese, and herbs: Sprinkle black pepper over the gnocchi, then add the remaining sun-dried tomatoes, oregano, basil, and Pecorino Romano cheese. Keep the gnocchi in the fridge in an air-tight container for up to 3 days. Reheat in the microwave in 30-second increments, stirring as needed.
