Creamy vegetarian Tuscan gnocchi bake with sundried tomato pesto. Budget-friendly and perfect for meal prep. Pair with easy and healthy lunch ideas from Taste.com.au's Chrissy Freer.
Ingredients:
  • 2 x 500g pkt potato gnocchi
  • 300ml thickened cream
  • 40.00 gm sundried tomato pesto
  • 100g baby spinach
  • 90g sundried tomato strips
  • 200g (2 cups) grated 3 cheese blend
Instructions:
  • Cook 2 large saucepans of gnocchi in boiling water until they float to the surface, about 5 minutes. Drain the gnocchi.
  • Combine the cream and sundried tomato pesto in one pan. Stir over low heat for 2-3 minutes, or until warmed. Add the cooked gnocchi and gently toss until well coated.
  • Preheat the oven grill to high. Layer the spinach in a 2L (8 cup) ovenproof dish. Sprinkle half of the sundried tomato strips on top. Spoon the gnocchi mixture over the spinach. Sprinkle the remaining sundried tomato strips and cheese on top. Grill for 5 minutes until golden and bubbly. Serve hot.
