Gnocchi with goats cheese and spinach

Indulge in fluffy gnocchi smothered in creamy cheese and savory tomato veggie sauce, Italian fast food bliss.
Ingredients:
  • 1x 350g jar pasta sauce with vegetables
  • 70g baby spinach leaves
  • 1 x 500g pkt gnocchi
  • 1 x 110g pkt goats cheese, crumbled
Instructions:
  • In a medium saucepan over medium heat, combine the sauce and three-quarters of the spinach. Cook for about 10 minutes, stirring occasionally, until the spinach just wilts.
  • Cook the gnocchi in a large saucepan of salted boiling water according to the packet instructions until tender. Drain and return to the pan.
  • Combine the sauce mixture with the gnocchi and toss together.
  • Spoon the gnocchi mixture into serving dishes. Crumble goats cheese on top and sprinkle with the rest of the spinach. Season with salt and pepper. Serve promptly.
