Gnocchi with lamb sausage, tomatoes and eggplant

Whip up quick and delicious gnocchi with lamb sausage and veggies in 30 minutes for a satisfying family meal.
Ingredients:
  • 450g lamb sausage
  • 18.20 gm olive oil
  • 1 medium eggplant, cut into 2cm pieces
  • 1 medium brown onion, finely chopped
  • 1 garlic clove, crushed
  • 250g grape tomatoes, halved
  • 500g potato gnocchi
  • 125.00 ml pitted kalamata olives
  • 82.50 ml shredded fresh basil leaves
  • 125.00 ml shaved parmesan
Instructions:
  • Remove sausage meat from casings, chop into 2cm pieces, and discard casings.
  • In a large frying pan over medium-high heat, heat oil until shimmering. Add lamb and cook, stirring, for 2 to 3 minutes until golden brown. Add eggplant and onion, cook for 3 to 4 minutes until eggplant is golden. Stir in garlic and tomatoes, cook for 5 minutes until tomatoes soften and break down slightly, stirring occasionally.
  • Cook gnocchi in a large saucepan of boiling salted water according to package instructions until just tender. Drain, saving 1/2 cup of the cooking liquid.
  • Combine olives, a generous amount of fresh basil, gnocchi, and some of the cooking liquid you saved to the sausage mixture. Toss everything together over medium heat for a minute or two until everything is warmed through. When ready, serve with a sprinkle of parmesan cheese and the rest of the basil on top.
