Elevate your dinner with this decadent Alaskan halibut Olympia baked in a creamy wine-caper sauce, topped with fresh dill and lemon.
Ingredients:
  • 1 pound halibut fillets
  • 1 tablespoon butter
  • 1 onion, chopped
  • 0.5 cup dry white wine
  • 0.5 cup sour cream
  • 0.5 cup mayonnaise
  • 2 cloves garlic, diced
  • 1.5 teaspoons seafood seasoning (such as Old Bay®)
  • 0.25 teaspoon ground white pepper, or to taste
  • 0.25 teaspoon paprika, or to taste
  • 1 sprig fresh dill, chopped, or more to taste
  • 2 bunches green onions, chopped
  • 0.25 cup panko bread crumbs, or to taste
  • 2 tablespoons drained capers, or to taste
Instructions:
  • Preheat your oven to 350°F (175°C) for optimal baking results.
  • Season halibut fillets generously with salt and pepper.
  • In a skillet over medium heat, melt butter then add onion. Sauté until translucent, approximately 5 minutes. Pour in wine and simmer until slightly reduced but still juicy, about 5 minutes. Transfer the flavorful mixture to a baking pan and place seasoned halibut on top.
  • In a bowl, mix sour cream, mayonnaise, garlic, seafood seasoning, white pepper, paprika, and dill for the topping. Season with salt. Pour the mixture over the halibut and sprinkle with green onions, panko, and capers.
  • Cook the fish in the preheated oven until it easily flakes with a fork, approximately 15 minutes.
