Creamy lemon and white bean dip

Elevate humble beans with olive oil, lemon, garlic, and herbs for a creamy, luxurious dip - perfect for last-minute entertaining!
Ingredients:
  • 420g can butter beans (see note)
  • 1/2 tsp finely grated lemon rind
  • 21.00 gm lemon juice
  • 36.40 gm extra virgin olive oil, plus extra to serve
  • 1 small garlic clove, crushed
  • 30.00 ml finely chopped fresh flat-leaf parsley, thyme or dill, plus extra to serve
Instructions:
  • Drain and rinse the beans, setting aside 1 tablespoon. Combine the rest of the beans with lemon zest, lemon juice, olive oil, garlic, and herbs in a food processor. Blend until smooth, then season with salt and pepper to taste.
  • Transfer the flavorful mixture to a stylish serving bowl and generously top it with the reserved beans. Sprinkle with an extra burst of fresh herbs and drizzle with a touch of flavorful oil. Present it and enjoy!
