Whip up a creamy lemon mousse with just 3 ingredients: lemon, condensed milk, and cream. Perfect for any occasion, from dinner parties to weekday indulgence. Just chill and enjoy!
Ingredients:
  • 2 x 395g can sweetened condensed milk
  • 3 large lemons, rind finely grated, juiced (see note)
  • 300ml carton thickened cream, whipped to firm peaks
  • Eskal Wafers Lemon biscuits, to serve (optional)
Instructions:
  • In a large bowl, combine condensed milk, lemon juice, and 2 tbsp of rind. Stir until mixed. Gently fold in the cream until just combined using a spatula.
  • Divide the mixture evenly into 8 small serving glasses. Chill in the fridge for 4 hours, or until firm.
  • Sprinkle the remaining rind on top and serve with lemon wafers, if desired.
