Creamy lemonade cupcakes - the perfect summer treat for any party.
Ingredients:
  • 1 1/4 cups water
  • 1/2 cup presweetened lemonade flavor drink mix
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 1/2 cup butter, softened
  • 3 eggs
  • 1 package (8 oz) cream cheese, softened
  • 3 cups powdered sugar
  • 3 tablespoons milk
  • 2 or 3 drops yellow food color, if desired
Instructions:
  • Preheat your oven to 350°F and line 24 regular-size muffin cups with paper baking cups.
  • In a large bowl, combine water and 1/2 cup of lemonade drink mix, then mix thoroughly. Add the rest of the cake ingredients and beat with an electric mixer on low for 30 seconds before increasing to medium speed for 2 minutes, ensuring a smooth mixture. Divide batter evenly among muffin cups, filling each about 2/3 full.
  • Bake for 20-25 minutes until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then remove them onto cooling racks and cool completely, about 30 minutes.
  • In a medium bowl, use an electric mixer on medium speed to beat all frosting ingredients except food color until creamy. Add a little more milk if needed to reach a spreadable consistency. For a yellow frosting, mix in a few drops of yellow food color. Refrigerate until you're ready to frost the cupcakes.
  • Ice the chilled cupcakes and refrigerate until serving. Keep stored in the refrigerator.
